I will spend most of my time skiing in the East Coast and probably 70% of the time on the slopes so I guess I wouldn't need skis that are too soft but softer than their alpine counterpart?
I wouldn't buy a pair of world cup GS skis, but honestly, I don't think there's any need to "downgrade" on stiffness, particularly torsional stiffness. If you are primarily skiing out east, on piste, a reasonably stiff pair of skis will be able to handle the conditions much better than softer skis.
If I lived out east, with one pair of skis, I'd seriously consider something like the Rossignol Experience 88.
I have not skied them, but I'm on the EXP 84 AI out west and it carves up a storm! I believe they come with a 1 degree bottom bevel and a 1 degree side bevel. I've tuned all of my skis to 1 degree/3 degrees for better edging - since tele does reduce that edge grip a bit - and love the results. I think the 88 is a stiffer ski that the 84, so out east it would probably be a good option. I think at your ht/wt, I'd consider 180cm in length, mounted boot center over the recommended mount point.
If you were interested in something a little more off piste capable, I'd consider the Blizzard Rustler 9. I have the 10 and it's magnificent! I believe the Blizzards come 1 degree/3 degree from the factory. Again, 180cm should be good, and boot center over recommended mounting point.
